Ayni expresses the Andean worldview of reciprocity, which has been practiced from pre-Hispanic times to present day in indigenous communities, based on the philosophy: "TO RECEIVE, YOU FIRST MUST GIVE".

These wines are inspired by this ancient form of exchange. Located to the south of Paraje Altamira in the Uco Valley, the Ayni vineyards were planted on calcareous virgin soil, rich in gravel and native flora, at about 1,200 meters above sea level. Complex mountain wines, they have a tertiary character thanks to having been aged in German oak barrels.

Ayni MALBEC

On cool March mornings, we harvest grapes by hand at our Ayni farm, located in Paraje Altamira, Valle de Uco, Mendoza. These Malbec grapes, once destemmed, go into concrete pools where they begin fermentation spontaneously, thanks to their native yeasts. It has natural acidity and is unclarified (certified vegan). This wine is usually aged for at least 12 months in 5,000-liter barrels German oak, as well as in new and used 500-liter barrels, without being toasted. In the glass, Ayni Malbec looks intense, with a purplish-red color and high depth. It expresses its complex and elegant character, reminiscent of black fruits, in the nose. It enters vibrantly in the mouth, allowing you to feel its natural acidity, its fruity profile reminiscent of currants mixed with aromas of pure chocolate, together with spices and lasting persistence. That’s why we recommend our Ayni Malbec for palates that enjoy red wines with high body and complexity, ideal to accompany meals with character, such as fatty, spicy dishes.

Ayni GRAVAS

On cool March mornings, we harvest organic grapes by hand from a small plot of super calcareous soil at Finca Ayni in Paraje Altamira, Valle de Uco, Mendoza. These Malbec grapes, once destemmed, go into concrete pools where they begin fermentation spontaneously, thanks to their native yeasts. It has natural acidity and is unclarified (certified vegan) and unfiltered. The wine is usually aged for 18 months in 5000-liter German oak barrels. Our Ayni Gravas malbec looks intense in the glass, with a purplish-red color and high depth. It shows its complex, elegant and expressive character in the nose, giving black fruit, balsamic, undergrowth and subtle tertiary notes. Its elegance, freshness, its profile of black fruit and ripe red figs impresses the mouth, together with its lasting persistence of flavor. That’s why we recommend our Ayni Gravas for palates that enjoy red wines with high body and complexity. It’s ideal as an accompaniment for roasted, somewhat fatty meals, like curanto and spicy pot dishes.

Ayni CHARDONNAY

In the warm mornings of February, we harvest grapes by hand at different times at Finca Ayni, located in Paraje Altamira, Valle de Uco, Mendoza. The grapes for this Chardonnay, once pressed as a whole bunch, start fermentation spontaneously thanks to their native yeasts. With natural acidity, unclarified, and unfiltered, making it certified vegan.

Ayni SPARKLING

In mid-February, we harvest Pinot Noir grapes by hand from Finca Ayni in Paraje Altamira, Valle de Uco, Mendoza Agrelo. The base wine starts fermentation spontaneously thanks to its native yeasts. Then, without completing fermentation, we bottle the base wine so that foam forms, and it later completes fermentation and aging in the bottle, together with its yeast, for 18 months. Our Blanc de Noir wine, made with traditional champenoise methods, is also vegan. It shows off its delicate pale pink color and a fine rosary of bubbles in the glass. In your nose you can notice fruity, floral and bakery aromas. You can feel its fresh acidity, creamy effervescence and medium-high complexity in your mouth. This is why sparkling Ayni is an ideal companion for appetizers, light meals, rich after-dinner chats and final toasts.
